It’s the most wonderful time of the year – if you’re a gourmet marshmallow company that is! It’s National S’mores Day! It happens every August 10th. PLUS August 15th is National Lemon Meringue Pie Day. So we’ve created a s’mores recipe that encompasses both scrumptious cravings.
We adore our super light, fluffy, airy, and tangy Lemony Meringue Plush Puffs Marshmallows so we’ve got a tasty smores recipe for you using them. They taste like a creamy lemon meringue cheese cake, with a gingery bite. Crisp, light, summery yumminess!
Ingredients
Ginger Snaps
Creamy Goat (or regular) Cream Cheese
Lemon Curd
Plush Puffs Lemony Meringue Marshmallows
Directions
Arrange Ginger Snaps on a plate, spread aprox. 1 tsp of cream cheese on one half, top with aprox. 1/2 tsp. Lemon Curd. Do this to as many as you plan to make. Toast the PP Lemony Meringue marshmallows until lightly browned (they toast up quick!). Transfer toasted PPs to each prepared half, let sit for about 1-2 minutes. Top with another Ginger Snap and serve!
